Introducing Carb Confident: A New Way to Think About Carbs

For years, I've watched clients walk into my office anxious about carbs — cutting them out entirely, confused about which ones are actually "good" or "bad," or avoiding entire food groups out of fear.
As a Registered Dietitian and Certified Diabetes Educator, I kept coming back to the same question: What if the goal wasn't to fear carbs, but to build a confident, sustainable relationship with them?
That question is what led me to write Carb Confident, a workbook designed to help anyone — especially those managing diabetes or blood sugar concerns — move from confusion and restriction to clarity and control.
Why I Wrote This Book
I saw the same pattern again and again in my work: good, well-meaning advice that was either too rigid to follow or too vague to act on. And mixed in with that advice were a handful of carb myths that just won't go away — myths that often cause more stress than they solve.
You've probably heard some of these myths yourself:
"If you have diabetes, you can't eat carbs." This might be the most damaging one I hear. Carbs aren't off-limits — it's about how you eat them, not whether you eat them at all.
"Don't eat the white stuff." This oversimplified rule lumps nutrient-dense foods like potatoes and certain rices in with genuinely low-value choices, when the real picture is far more nuanced.
"Fruit is basically candy." Fruit's fibre and water content change how your body responds to it compared to refined sugar — treating them the same ignores real physiology.
"Sugar-free means it's fine to eat freely." It depends what it's replacing — sugar-free gum barely moves your blood sugar, but a sugar-free cookie still has carbs and can spike it just the same.
People needed something in between the myths and the overly rigid rules — practical, flexible, and rooted in real behavior change. That's what Carb Confident is.
The Four Carb Rules
Carb Confident is built around four simple principles:
Never Carb Alone — pairing carbs with protein, fat, or fibre to support steadier blood sugar
Carb With a Friend — building meals that work together, not against each other
Carb Responsibly — portion awareness without obsessive tracking
When You Over-Carb, Move Your Muscles — a practical, judgment-free reset
These aren't rules meant to restrict — they're meant to simplify decision-making so healthy eating becomes second nature, not a daily battle.
